Zutaten
400 g | rice |
200 g | shrimps |
2 | apples |
1 | pineapple |
½ Bund | stalk celery |
100 g | raw cane sugar or coconut flower sugar |
250 ml | apple juice |
30 g | fresh ginger |
2 TL | ginger lemongrass spice oil |
salt and pepper | |
2 TL | lemon juice |
Zubereitung
For the ginger sauce:
Peel ginger and chop very finely. Melt sugar in a pot until it caramelises. Add ginger, deglaze with apple juice and boil down until the sauce has a syrup-like texture.
For the stir fry:
Wash apples, remove core and cut into small dice. Peel pineapple and dice the pulp. Wash and chop stalk celery. Sauté the shrimps in ginger lemongrass spice oil. Add apple, pineapple and celery dice and stir fry for a few minutes. Season with salt, pepper and lemon juice. Serve in deep plates with rice on the side.
