Zucchini rolls Recipe

| 2 | medium-sized zucchinis |
| 20 | dried tomatoes |
| 200 g | feta cheese or tofu |
| 2 EL | Mediterranean spice oil |

Preparation
Chop tomatoes and feta cheese in 3 x 2 cm large pieces and marinate in one of our spice oils - e.g. Mediterranean, thyme sage, herb garlic, barbecue, Herbes de Provence or basil for a few hours or overnight. \r\nWash zucchinis and cut lengthwise into thin slices. Sauté in coconut oil until golden brown, season with salt and pepper and allow to drip on paper towels. Place one tomato and one feta cube on each zucchini and roll up. Thread on a skewer. Garnish with basil if desired.
