Sesame seed flour is made from freshly milled unroasted sesame seed through cold-pressing. It still contains 10 to 12 % sesame seed oil, is rich in vegetable protein and contains almost two times more fibre than wheat flour. Sesame seed flour adds a pleasant nutty taste to various dishes and is a valuable source of protein and minerals. It can replace 10 to 20 % of a given flour in a recipe.
Keep the product well sealed and in a cool place. If exposed to humidity, it clumps and might mould. Storing sesame seed flour at a temperature above 20 °C might produce toxic aflatoxins. Use up in short period of time.
Gluten-free and low-carb alternative
Compared to wheat flours, which are made up of 60 to 70 % carbohydrates, sesame seed oil has a much lower content of carbohydrates of only 30 %. This makes it an ideal ingredient for low-carb diet.
Sesame seed flour is gluten-free and therefore also suitable for people affected by gluten intolerance. Since it lacks gluten, it is best to use another flour or a thickener like guar gum to obtain the desired dough texture. Otherwise, the dough might collapse after baking.
Usage
Sesame seed flour is gluten-free. With its smooth sweet taste, it is ideal for baking bread, fine pastries, as ingredient for muesli or desserts, refining sauces etc.
