Chili Würzöl Schärfeskala (Scoville)Fiery with 4689 Scoville

The chili seasoning oil from Ölmühle Solling has a spiciness level comparable to jalapeños at around 4689 Scoville. The scientist Wilbur Scoville developed the Scoville unit named after him in 1912 to determine pungency. The decisive factor for pungency is the capsaicin content, with pure capsaicin having a Scoville value of 16 million. To determine the capsaicin content, Scoville diluted chili with sugar water until test subjects could no longer taste the spiciness. The amount of sugar water required gives the Scoville value. Nowadays, the Scoville value is reliably determined by chemical analysis (high-performance liquid chromatography).

What seems impossible has been scientifically proven. The capsaicin contained in chilies causes a burning sensation on the tongue, which is countered by the body with the release of serotonin and other happiness hormones. When the pain subsides, what remains? The happiness hormones.

Serotonin affects our mood via the central nervous system. It gives us a feeling of serenity and contentment, while at the same time inhibiting feelings such as fear, sorrow or even hunger. Because of these effects, serotonin is even used to treat depression.

The consumption of chilies releases serotonin in the human body, depending on the degree of spiciness of the chili. Compared to chocolate, for example, chillies are a healthy >food< (mood food) that is used in numerous dishes.

Other effects of serotonin:

  • Serotonin has an appetite suppressant effect, which is why it is also contained in weight loss drugs.
  • According to the latest findings, serotonin promotes the body's alert state
  • Serotonin is released as an activator for the pain stimulus in the event of injury

Other ingredients in chillies

Capsaicin

Capsaicin is the substance in chilies that is responsible for the sensation of heat when eaten. The substance triggers an apparent burn in the body. The body reacts with a pain stimulus and sweating to regulate the temperature. Capsaicin also stimulates blood circulation, which makes the taste receptors more active and therefore the taste of food is perceived more intensely.

Vitamin C

Chillies contain around 128 mg of vitamin C per 100 g, a relatively high amount compared to other vegetables. Lemons, for example, only contain around 53 mg of vitamin C per 100 g. Vitamin C is an important part of a healthy diet because, among other things, vitamin C acts as an antioxidant to neutralize free radicals in the blood and body cells.

In addition to vitamin C, chillies also contain vitamins A, B1, B2, B3 and E, as well as iron and calcium.

Habe das Öl erstmalig bestellt. Es ist sehr lecker, aber auch superscharf. Man muss vorsichtig dosieren.
