Our untreated pumpkin seeds come from organic cultivation and are rich in valuable fibre. Their high content of protein and minerals make them an ideal snack for a healthy life style. Pumpkin seeds are very versatile. They are perfect for muesli or to refine salads and vegetable dishes. They add that certain something to soups, especially autumnal pumpkin soup. Pumpkin seeds can be used for baking bread or buns as well.

Origin and history

Pumpkin seeds have been known and used for more than 7000 years. But it was only after Columbus' discovery of America that the pumpkin spread to other regions than North and South America. Since then, it can be found in all warmer regions in the world. The agricultural cultivation of the pumpkin in the 16th century significantly contributed to the rapid spreading of the old crop.

Three most common types of pumpkin

Today, only five of the more than 800 known species of pumpkins are cultivated, while the species Cucurbita maxima, Cucurbita pepo and Cucurbita moschata are most likely to be found in the gardens. Pumpkin fruits can reach a weight of up to 200 kg which makes them the largest fruit in the world of the plants. Every pumpkin, no matter the size, contains around 150 seeds. Actually, pumpkins are not even fruit but berries. Like other berries, their extremely hard shell encases the valuable seeds.

Harvesting of pumpkin seeds

It takes around 60 to 150 days until pumpkins are ready for harvesting. Usually they are collected between August and October when they are overripe so that is easier to prepare them for cooking. The pumpkin seeds are either separated from the pulp automatically, or, which is still often the case, in manual work before being washed and dried. When they are entirely dry, the seeds are peeled and dried again.

Taste and usage

Fresh pumpkin seeds with their mild, nutty taste are perfect for savoury dishes, muesli, salads, soups or as a snack in between. They are also ideal for baking bread or buns. Their high content of oil gives them a slightly creamy flavour.

Small seeds - big impact

Pumpkin seeds contain valuable vitamins and enzymes and supply the body with unsaturated fatty acids and minerals like beta-carotene, magnesium, iron, zinc, selenium and phytosterols. The latter are said to prevent and ease bladder and prostate troubles. With 30 g protein per 100 g, pumpkin seeds are a good source for plant-based protein.
