Ramsons as an alternative to garlic
Bear's garlic (Allium ursinum), also known as wood garlic or ramsons, grows in the moist, shady deciduous forests of Europe - such as the Weserbergland. Its lush green, long-stemmed leaves are some of the first greenery to appear in the forest in spring. The name 'bear's garlic' comes from the fact that bears are said to have feasted on the succulent and nutritious greenery after their long winter hibernation. Wild garlic is related to garlic and has a strong, fresh flavour.
