For this fine flour, fresh chia seeds are carefully de-oiled and ground. It still contains around 7 g chia oil per 100 g as well as vegetable protein and dietary fibre. Ideal for thickening soups and sauces. A daily intake of 15 g should not be exceeded.

Origin and history

The seeds of the chia plant were already used by the Aztec, Maya and Inca in Central and South America and appreciated as nutritious source of energy. They were both a staple food and natural remedy back in the time. "Chia" derives from the language of the Maya and means energy. In Germany and Europe today, the small, black, South American seeds are very popular and are often used as ingredient for muesli or baking.

Its high content of protein, omega-3 and omega-6 fatty acids makes chia seeds and chia flour a remarkable source of valuable ingredients.

Chia seeds are especially rich in omega-3 fatty acids. That makes them an ideal, plant-based source of polyunsaturated fatty acids. Chia flour is therefore perfect for vegan cooking and baking as it can be used as a substitute for eggs. Soaked in water, chia flour produces a gel, that slows down the release of carbs and their conversion to sugar. This way, the energy in the food is released slowly in the body which leads to a reduced appetite and longer endurance.

These properties of chia are similar to flaxseed. When soaked in water, chia seeds produce a gel, which can also be seen in flaxseeds and psyllium seeds. The high water absorption capacity and the resulting chia gel make it ideal for dough preparation. In combination with soda or yeast, it gives the dough a texture like grain flours (wheat, rye or spelt).

Ich, als LowCarb Veganer, schätze die Öle und Mehle der Ölmühle Solling. Ich kaufe hier Walnuss, Sesam, Kokos, Hanf, Chia/Leinsamen und Kürbiskernmehl. Des Weiteren ordere ich auch Kurkuma und Hagebuttenpulver. Ich bin mit allen sehr zufrieden. Die einzige, kleine Einschränkung, das ist die Verpackung. Für mich, der die... mehr >>
