Coconut flour is produced from fresh coconut flesh which is gently dried, deoiled and finely ground. It still contains approximately 12 g per 100 g coconut oil together with vegetable protein and approximately 38 g per 100 g dietary fibre.

Hazelnut flour is made from fresh, hazelnuts which are gently deoiled and finely ground. It still contains approximately 17 g per 100 g hazelnut oil together with vegetable protein and 23 g per 100 g dietary fibre.

Our pumpkin seed flour is made from pumpkin seeds which are gently de-oiled and finely ground. It still contains around 8 g pumpkin seed oil as well as 62 g vegetable protein and 13 g fibre per 100 g. Just like pumpkin seed oil, pumpkin seed flour has a greenish colour and is a culinary rarity. As it is gluten-free, it is an ideal baking or cooking ingredient for people with gluten intolerance.

The flour's mild yet distinctive taste of pumpkin seeds adds that special something to any dish, for example for breading meat or fish. Pumpkin seed flour can also be used to thicken and to refine smoothies with a nutty taste and further protein. It is also ideal for baking. Especially for pumpkin bread from fresh pumpkin, it is highly recommended to use pumpkin seed flour. You can also mix it with other flours. Moreover, the special flour can be used for thickening sweet dishes, dessert sauces or as supplement for muesli.

With valuable ingredients of unroasted pumpkin seeds

As our pumpkin seed flour is made from unroasted pumpkin seeds, it contains numerous valuable ingredients as well as minerals and micronutrients. For instance, it is rich in iron, that is needed for the production of haemoglobin, the red blood pigment which is responsible for oxygen transport. Therefore, pumpkin seed oil plays an important role in vegan and vegetarian diet. Furthermore, pumpkin seed flour has a beneficial fatty acid composition: It contains around 10 g unsaturated versus 2.5 g saturated fatty acids per 100 g.

With its high content of protein and fibre, pumpkin seed flour is especially popular in low carb cooking. It only contains around 3 g carbohydrates per 100 g (compared to 70 g in wheat flour). Athletes also favour the flour as valuable source of protein over wheat flour - according to the type, the latter only provides around 12 g protein per 100 g.

Usage

For breading fish and meat, for thickening and refining smoothies as well as for baking and desserts. Also delicious as muesli ingredient.

Ich, als LowCarb Veganer, schätze die Öle und Mehle der Ölmühle Solling. Ich kaufe hier Walnuss, Sesam, Kokos, Hanf, Chia/Leinsamen und Kürbiskernmehl. Des Weiteren ordere ich auch Kurkuma und Hagebuttenpulver. Ich bin mit allen sehr zufrieden. Die einzige, kleine Einschränkung, das ist die Verpackung. Für mich, der die... mehr >>
bestellte Ware recht schnell aufbraucht, müsste es nicht unbedingt Metall sein. Papiertüten würden vollkommen ausreichen und sind umweltverträglicher. Der Service ist sehr gut. Freundliche Mitarbeiter.

Ich backe mein Brot selbst und gebe immer Kürbiskerne dazu. Diesmal habe ich auch einen Teil des Mehls (200 g bei 500 g Dinkelmehl) durch Kürbiskernmehl ersetzt. Das Brot bekommt einen kräftigeren Geschmack, wird aber auch schwerer. Das Brot gefällt uns gut, ich werde das nächste Mal aber nur 100 g Kürbiskernmehl nehmen.... mehr >>

Habe das Kürbiskernmehl erstmalig bestellt und max. 10 Prozent davon im Brot verarbeitet. Mit Kürbiskernen ist das Brot auch optisch gut geworden, leicht grünlich würde ich die Farbe beschreiben. Da der Anteil vom Kürbiskernmehl im Verhältnis zu den anderen Mehlsorten eher gering ist, hält es sicherlich lang.

Das Kürbiskernmehl verleiht Gebäck wie Brot oder englischen Scons eine besondere Geschmacksnote als Teilkomponente z.B. einer Dinkelmehlmischung oder eines Hefeteigs - nicht zuletzt auch eine schöne und ansprechende grünliche Farbnuance, welche ebenso das Auge erfreut!

Ich habe es noch nicht verwendet, jedoch Farbe und Geruch finde ich schon jetzt toll. Da ich unser Brot selbst backe, wollte ich gerne einmal Kürbiskernmehl ausprobieren, weil ich das bisher noch nicht kannte und es auch für ketogene Ernährung wunderbar einsetzbar ist.
