Our untreated walnuts in raw food quality come from organic cultivation and are rich in fibre. Walnuts are perfect as a snack or for baking bread and pastries. The half kernels are an ideal topping for salads, ice creams and desserts.

Origin and harvesting

The walnut is one of the oldest trees in the world. Its history goes back as far as 7000 before Christ. The walnut originated from Persia and was spread to China, Central Asia, Greece and the Roman Empire via trade routes. The Romans planted walnut trees in their gardens and brought them to Germany as well. The trees grow slowly and reach heights of up to 20 metres.

Harvesting takes place from mid September to end of October. The nuts are ripe and ready to be collected, when they fall from the tree and the husk cracks open. If dried and stored properly, the nuts are durable for several months. Only the brown-amber, sometimes even white kernel inside the light brown, solid shell is edible.

Taste and use

Since the Romans brought the walnut from the Near East to Germany, the trees spread rapidly in the local gardens and established as one of the most popular nuts nowadays. Especially in autumn and Christmas time, the precious kernels are high in demand. Walnuts are appreciated for their mild, nutty aroma and their versatility. They are perfect pure as a snack, in a trail mix, muesli, pastries and desserts but also for savoury bread, salads, with cheese or with venison. You can highlight the aroma of the kernels by slightly toasting them in a pan without additional fat.

Walnut kernels are a valuable source of protein, fat, carbohydrates and vitamins. They are a recommendable healthy snack in between for a balanced diet.

Walnuts in their shell should be stored in a dry, cool, dark, airy place. That way, they are durable for several months. Shelled kernels should be kept away from oxygen, preferably in the fridge.
