Our organic elderflower balsamic vinegar is a mild vinegar with the fine, fruity aroma of elderflower. The balsamic vinegar is manufactured through the natural fermentation of elderflower syrup. Organic Riesling vinegar and a hint of lemon refine its taste. Our elderflower balsamic vinegar can be used for everyday cooking, mixed salads, or for refining dips and light sauces.
Cooking with elderflower balsamic vinegar
The smooth balsamic vinegar creates an exquisite taste for fresh leaf and raw food salads. For a refreshing drink, you can add a squirt of the vinegar to mineral water. Also tasty as aperitif with sparkling wine.
Elderflower balsamic vinegar pairs pefectly with our oils: For a vinaigrette, it is a great combination with mild and nutty oils like walnut, hazelnut or macadamia oil. Also suitable for a classic dressing with olive oil.
With our range of fine vinegars and mill-fresh oils, you can prepare a large variety of vinaigrettes. The basic recipe is very easy: 1 part vinegar for 3 parts oil, season to taste with salt and pepper. Our vinegars are also perfect for seasoning soups and sauces or for a hint of acidity in any dish.
Traditional production with "mother of vinegar"
If you notice an opaque, jelly-like layer in an opened bottle of vinegar, it does not mean that it has gone bad. On the contrary, it is a feature of an unpasteurised, traditionally produced vinegar which is called "mother of vinegar". It consists of valuable acetic acid bacteria that convert alcohol to acetic acid, using oxygen. When a bottle of vinegar is opened, these bacteria might become active again and produce the abovementioned biofilm.
