Our organic coconut flour is made from the flesh of the ripe coconut. It is gently dried after harvesting, de-oiled by mechanical pressing and then ground.
The advantages of coconut flour over wheat flour are many. It has an exotic and typical coconut flavour. Coconut flour is rich in protein and fibre and is gluten-free. This makes it suitable for a wide range of low-carb recipes.
Coconut flour is high in fibre
At around 35g per 100g, the fibre content of coconut flour is remarkably high. The sweet-smelling flour therefore has a high swelling capacity and binds a lot of water. The coconut oil content is reduced to 18 g by the pressing process. The carbohydrate content is 21 g and the protein content is about 17 g per 100 g.
Cake and waffle batters can be made with coconut flour. About a quarter of the grain flour can be replaced with coconut flour in almost any recipe. Thanks to its sweet taste, you can sometimes use less sugar than the recipe calls for. Our organic coconut flour is also a natural source of potassium. The potassium content (approx. 1750 mg per 100 g) is seven times higher than the sodium content. Minerals make up around 5g per 100g of flour.
Coconut flour can be used in a variety of recipes and is an excellent ingredient for protein shakes. It gives hemp protein shakes a sweet, exotic flavour and a firmer texture.
Waffles, cookies and cakes made with coconut flour
Coconut flour adds a delicate and typically exotic flavour to baked goods such as waffles, cakes and cookies. The mild coconut flavour is also perfect for pancakes and crêpes. Coconut waffles can be served with fresh fruit such as mango, raspberries or strawberries.
Coconut flour can be used to replace some of the grain flour in baking. However, as it does not contain gluten, a natural thickener such as psyllium husk powder, gua gum or locust bean gum can be used to increase the firmness of the dough.
